lemon ricotta pancakes with blueberry compote.

My guy at Buttermilk convinced me to get these today in lieu of my usual red velvets, then said if I didn’t dig them, he’d give me my usual for free. As he handed them to me, he waited for me to give them a taste and said the offer still stood. I didn’t take him up on it because they were pretty damn good.  Nice and light, not overwhelmingly sweet… just for lack of a better word, summery.
